CRUMBED MUSHROOMS WITH TARTARE SAUCE

Serves 4.

Wonderful dipped into a deliciously tangy tartare sauce.

2½ cups fresh white breadcrumbs
3 tbsp chopped parsley
1 pinch salt and milled pepper
6 cups button mushrooms
4 tbsp self rising flour - for dusting
3 large eggs - beaten
sunflower oil - for deep frying

Mix breadcrumbs and parsley together, season.
Dip each mushroom into water, then dust with flour.
Dip into egg and coat with breadcrumb mixture.
Place on a baking tray and chill in fridge for 5 minutes.
Fry mushrooms in batches in hot oil for 3 minutes or until cooked through and golden brown.
Remove with a slotted spoon
Place on paper towel to drain excess oil.


TARTARE SAUCE
180 ml mayonnaise
2 tbsp chopped cocktail gherkins
1 small onion - chopped
1 pinch salt and milled pepper

Mix all sauce ingredients together.
Season to taste.
Serve mushrooms hot with tartare sauce and lemon wedges.
